One of my favorite dishes is a simple but classic Italian pasta dish called Cacio E Pepe.

It’s little more than pasta noodles, Pecorino Romano and fresh ground black pepper. Simple but incredible.

Tonight I used a recipe posted by Greg a while back; http://flavorevolutions.com/EpicuresAsylum/?p=1022, and I gotta say it’s better than the one I’ve used for years now.
Greg, the lemon zest and toasted peppercorns took it to another level! Bravo.
