Today I found the first chanterelles for this year in my usual mushroom hunting grounds.
I was so exited!20220626_135549(1).jpgI decided to make some spaghetti and cook some italian style dish, which I tried some 20 years ago when I was in Rome visiting a little italian restaurant near the pantheon.
A lot of sage, thyme and a wee bit of onions and garlic are involved here.

Sorry for the crappy dish-picture, but I was hungry?.
It was almost as good as in Rome.

Chantarelles are magnificent and the pasta you made is gorgeous.

I know them as eierschwammerl and they are incredible in every way.

Have you tried them sliced up with scrambled eggs and chives?

If I find a good batch I make Jägerschnitzel and use them in the sauce. Served with spätzle and a nice cold beer.
I have tried them with eggs and chives, thats also very good!

Eierschwammerl in Rahmsauce with bread dumplings is good.

Many years ago I was exploring the fields around where I'd just moved to and discovered a patch of regular common mushrooms. I was delighted, so started to gather some up....popping the odd one in my mouth as I did so.

Once I'd gathered a fair bundle I trotted home, put the pan on the stove with a good knob of butter whilst still popping the odd 'shroom into my mouth.

Imagine my horror when after a few moments in the pan I spied dozens of tiny maggots crawling out from under the gills :eek:

I went straight to the loo and retched.

Were they growing out of a decomposing carcass? I usually avoid collecting those unless it's a very bad day foraging.

What state are you in? I haven't seen any at my hunting spots so far. But we've also been under a hot dry spell.
Actually found psilocybin on a job I was working 2 weeks ago. Needless to say, I went back to check on thay job almost every day after haha.
Looking forward to hunting season this year. Also, supper looks great! Well done sire
