To me an "all day smoke" is the tobacco equivalent of a "session beer", meaning that you can have quite a few in a short period without losing the enjoyment. For example, it would be easy enough to drink six basic lager-style beers in a row over an evening, but not many people would want to drink six heavily-hopped IPAs in a row.
For a tobacco example, if I have more than two or three pipefuls of medium to heavy latakia blends throughout one day, then sometimes I get the ole leather tongue and my taste will be off for the next day, and my tongue and mouth will feel dry. However, I can easily smoke five or more bowls of a burly blend like Carter Hall without any problems. To me, that's an all-day smoke. Of course that only comes into play on the weekends since I only smoke one or two bowls a day during the week.

The above are all good examples.
For the cellar, I encourage people to stock up on the all day blends first, or at least the blends necessary to sustain your hobby if the worst case scenario happens (e.g. Dunhill Early Morning Pipe for me). Then it's a hierarchy of needs. We don't all "need" unobtainium blends, but we do "need" a good base of all day tobacco.
Example All-Day blends I have deeply cellared: EMP, Old Dark Fired, Capstan Blue, Doblone d'Oro, Escudo, FVF, Golden Sliced, etc.

Well he's got the hat! Haven't tried any of those except for the Frigate and it's delicious on it's own, so I can probably see that I would like the others. For me, it's not as much about the nic hit as it is the taste. I love full bodied flavors in my food, beer and apparently tobacco. Just ordered a MM Dagner poker because for some reason, I just feel like my Sleepy Hollow needs to be in a poker and threw in some Gaslight for good measure. Haven't tried it yet, but it's supposedly a good, strong tobacco, which is right up my alley.
In regards to the OP, I think an all day smoke for me, if I could smoke all day, pipe never leaving my lip, I wouldn't necessarily want something super heavy, but an all day smoke would be something with medium nicotine, but still taste great and smell good. I could smoke SWR aromatic all day, but I get tired of things easily if I've had it too much, too often, so maybe a few days of it would be all I could take, then I'd have to switch to another one I find to be an "all day smoke". I enjoy the harder hitting stuff a few times throughout the day though too, so a good burley might be a nice all day smoke with a bowl of Black Frigate thrown in for good measure.

To me an all-day smoke is one that if I were to be gone doing something all day, only taking a pipe and a single pouch or tin, would fit the bill. This means an all-day smoke is NOT:
-Something so complex that you have to really focus heavily on the smoking experience to enjoy all the nuances.
-Something that requires any elaborate preparation.
-For me, a Virginia, which I like the taste of but can't smoke repeatedly during the day because the pH doesn't agree with my tongue.
-Something that will cause excessive moisture requiring a mid-smoke swab with a pipe cleaner.
So basically, for me, an all-day blend is a trouble-free easy smoking blend that you just stuff and puff when you get the urge.

Some like only full-strength high-nic tobacco, all day or otherwise. An all-day smoke is what a person finds agreeable for longer sessions, whether all day or two bowls. I went on a full-strength mission for a year or two, and I still enjoy most of those blends or single-leaf tobaccos. But I've doubled back to enjoy some tobacco-forward aromatics and some milder non-aro blends too. My latest all-day nominee, courtesy of recommendations by Cosmic and jiminks, is Daughters and Ryan Two-Timer, two toasted burleys, with a lovely fragrance in the bag and a sturdy flavorful taste. Other interesting mild and subtle blends are Nate Sherman 536 English and Spilman Mixture, not to mention SWR Aro and Iwan Ries Three Star Blue.

For me, an all day blend is simply one I can enjoy all day, whether I smoke 1 bowl or 40. It's not complicated or overly strong, doesn't wear out my taste buds, and doesn't give me a nicotine overdose. I actually find that I spend most of my time with these blends because I rarely have time to sit and enjoy a bowl of something special. Some examples in my all day rotation:
Sutliff Revelation match

Sutliff Holiday match

Sutliff Briggs Mixture

H&H Chestnut

P.S. Proper English, English Luxury, and English Oriental Supreme
Smoking one blend all day has taught me that such familiarity leads to finding flavors that are more subtle and enhancing my ability to pick out those flavors in other less traveled blends. I really treasure these uncomplicated blends. Too often we get caught up in the hype of really complicated and nuanced blends, forgetting that the number one reason to smoke a pipe is to simply relax.
Cheers,
Chili

Charf, to be serious (for once; don't expect it of me more than about once a month, if that), for your queries 2 & 3, either Black Frigate, BCA, or 3 Nuns (any of the formulations); & anywhere from 2-5 bowls a day.

I think lawdawg really captured kind of the classic definition of an all day smoke, or at least the best analogy for such. But as you can see, the definition varies for each person. Most of them are wrong, but that's besides the point. You'll know your all day smoke when you find it, and then you'll forget everything said here and have your own definition.

Hell, half of us can't manage to smoke a pipe 'all day' w/o serious tongue damage.

Burley supposedly has less sugar, thus less 'bite', it is said. Also; burley does have nicotine. The profiles of tobacco varietals is also dependent on what part of the plant the leaves were on.

Typically, this would be tips, tops, middle, and bottom, from what I've read.

Codger blends are considered all day tobacco blends. They are usually only mildly topped, and mostly burley.

They are easily loaded, don't go out, and don't burn your tongue, with a modicum of moderation. After awhile, they taste like home.

The pipe looks like a (pretty) cannonball and the tobacco is like gunpowder. Almost like you're a pirate or something...
What would give you an idea like that?

Thanks everyone for the insightful responses. Certainly rotating my way several times through the first 10 blends I have in my collection has been very interesting. Couldn't say I have found "the all day smoke yet" but definately finding some I like more than others.

There are plenty of blends I can and do smoke all day, but I typically switch it up throughout the day by smoking different blend types. Once in a while however, I'll smoke one blend all day but usually in different pipes. Many Mac Baren blends can be smoked all day such as Symphony, Golden Extra, Cube Silver, Original Choice, Vanilla Cream etc. I might also smoke Dunhill EMP, Captain Black Black Sea, Samuel Gawith Grousemoor, Peterson Irish Oak, Peterson Sunset Breeze, Comoy's Cask #7, C&D Bijou, Brigham Ripley Ave or any lightly topped quality Vanilla Rum blend, bowl after bowl. If there wasn't so much variety I could be content with any of the above all day everyday, but in the meantime I'll keep mixing it up as variety is the spice of life!
