I've got a couple of 15 year old olive trees, and if you get to N. California, you can have some 'Merican olive to carve.
Oddly enough, I have been thinking about a month on a Greek island, and yesterday I drove an hour to have moussaka for a meal, only to find they didn't have it on the menu. So settled for spanakopita, soup, baklava and espresso.
Have any pictures of your source wood? Olive grove/orchard?
