Maybe because this is anaerobic fermentation. But then again, you may be right. I really believe they take it out at the 3 month mark is because if they left it compressed for one solid year it would be a very dense brick. Perique is done after 3 months of fermenting anyway. Pressing for an additional 9 months doesn't get you anything.It seems a 'universal' truth that once stopped it doesn't start again?
