Weber Kettle for the win! Chicken and vegetables cooked in 2 cups extra virgin olive oil. Two hours on the Weber at around 350. Lightly smoked with a little cherry wood.
Please excuse my ignorance but A, did you use 2 cups of EV oil to cook the whole meal? and B, did you actually put the casserole pot full of food inside your barbeque kettle? If so I presume you left the lid off?

The chicken is stuffed with a lemon halved, garlic and thyme. It and all the veggies go in the pot and two cups olive oil added. It all cooks slowly in oil. The pot goes on the kettle without a lid. Indirect heat. Kettle lid closed. Adjust air vents to run around 350F. Took about two hours.
