-do you think file is necessary for gumbo?
-do you eat broken rice down there? In France it's referred to as "rice creole"
-are mashed potatoes traditionally served with any Cajun specific dishes or is it always rice?

Not a Cajun nor Creole. Not even been down there. But love cooking gumbo, jambalaya, and étouffée. File is thickening agent from ground leave of sassafras. I don't use it since my gumbo stay thick while I'm eating it. But I would love to hear it from people from that region.
