Looks delicious. I love scallops, but there is a bit of a learning curve to cooking them. The first few times I cooked them, they came out like pencil erasers in taste and texture. Now, high heat, and fast, is how I do them, and they turn out much better.
Yup - I babysit them. I like mine medium to medium rare and one minute too long on the heat and it's eraser time

Actually I get the flash frozen giant ones from Sam's Club - they thaw really well in cold water and you would never know they had been frozen they cook so nicely and are super sweet in flavor. Simply amazing :)
Ya I was wondering if they were frozen. Flash or dry frozen is the way to go. Some frozen scallops are "wet" frozen in a gooy solution that's not good. They won't sear up and don't taste nearly as good. Man, I'm hungry!
