I am with jayh. I rarely drink anything but coffee or water; coffee is definitely preferred. I often smoke an after dinner pipe with an after dinner whiskey, and I have found it to be a bit mediocre. I feel like the pipe over powers the whiskey, which means you are in danger of wasting good bourbon or scotch. Although, I definitely enjoy a whiskey and pipe after a great saturday night meal. A sunday morning pipe and coffee just seems to be the better pairing. As far as food, I am a bit like Frog Morton, post meal pipe.

I haven't posted in awhile, life can be demanding at times...
I personally recommend scotch ales or other sweet and malt-forward beer styles to accompany or follow pipe tobacco. Barrel-aged beers would also be acceptable; subtle flavours found in sessionable brews will be overwhelmed by the pipe's intensity, so robust examples are important. I for one usually find such beers cloyingly sweet or overpoweringly oaked, but find them perfectly balanced by my palate after smoking a pipe. I would be curious to know whether rauchbiers made from smoked malt, or other styles like smoked porter, complement or clash with latakia? Does anyone have experience with this pairing?
Ruby or tawny ports will also deliver great results. Select rubies if you desire a fruitier flavour, or tawnies if you want more of a nutty, caramel profile. (Malmsey Madeira is also quite enjoyable and is much longer-lived than the other fortified wines for those occasional drinkers out there.) Stronger, but truly a warming and enjoyable match.
I for one am not a proponent of spirits, so I can't attest to the merits of whiskey or rum or any other liquor. I'm sure they all have their place. The key is to drink those you enjoy and to savour their unique character!

Sweet tea is always a welcome companion to most tobaccos. My recent favorite though is Billy Budd, a Cornell & Diehl blend whose description is: "A heavy Latakia blend with rough cut Burley, bright Virginia flake and a good amount of rough cut cigar leaf", with a nice strong cup of coffee. I also enjoy Kahlua in either cream or coffee, or Grand Mariner with a bolder smoke.

Lately I have really been enjoying Orlik's Golden Sliced with a black Earl Grey tea. Something about the citrus in Orlik's and the zest of Earl grey just works good together... Particularly early in the morning or late in the evening right at sundown
