In addition to what I listed above as what I actually do there are three hobbies that I wish I had learned but never seemed to find the time, traditional bookbinding, cheesemaking and bee keeping.
All three have fascinated me for many years.

I like to break and train horses. Riding horses is a great way to keep you centered. It is also a great time to enjoy a pipe.
I also like to hunt upland birds. In the summer we like to spend a lot of time camping here in the Black Hills. Usually we bring the horses along and spend as much of the weekend in the saddle as possible.

+1 on the bees! So many people I meet are hateful towards them (or even me for being a beekeeper) but there's something therapeutic about working around them. It may be my job but it's definitely not JUST a job. I used to have a hive on my balcony in the city before I ever moved to a farm house, now we keep about 24 colonies on my front lawn... Plus a couple thousand anywhere else people are willing to have them in exchange for free honey.
Other than that basically anything that will take me outdoors:

Snowboarding

Fishing

Kayaking (not as much as I'd like)

Anything involving my dog

Woodworking

A little gardening
I used to play bass guitar but it's been too long since I held one
I intend to get into hunting (too many skunks and bears at the farm not to) and welding (too useful when it comes to all things power sports) and maybe one day I'll learn to swim and get out on the water more. I almost drowned once and haven't felt comfortable in the water since.

I do a lot of reading, also shooting and hunting. Lately have been doing a lot more of that with flintlocks, loads of fun.
I also play a lot of computer games and tabletop miniature wargaming (historical mostly, not Warhammer type).

I run a Dungeons & Dragons campaign, enjoy historical role playing (and I'm not talking about the William Taft outfit I make my wife wear in the bedroom), enjoy practicing shooting my Glock 19 at the range, video gaming, drinking mead and engaging in my Asatru faith, rough housing with my son, annoying my wife, and I recently picked up a Deering Goodtime Banjo which aids further in annoying the wife.
If I had the funds and didn't need to work to support the family, then I'd most likely be looking to apprentice as a blacksmith. I've always been interested, and have been binge watching Forged in Fire on History.

Have something I want to start doing. Had had sitting around a shelf for 29 years a couple of flute instruments I want to learn to play which I haven't yet: an Irish tin whistle, (no surprise there :P), and an Andean Tarka. Can't find a tarka fingering charts on line so guess I'll make use of the native American flute one I've found seeing as how it's another 6 holes wooden flute. Then maybe I'll try the NA flute music on it I've found.

I enjoy wood carving, simple stuff like Christmas Ornaments and faces on walking sticks, fishing, and cooking.

cheesemaking and bee keeping

Jay, I've dabbled in cheesemaking and had some success with the soft cheeses. The one time I tried cheddar, it turned out a bit "Grainy." I'd like to get back into that at some point.

I've also been interested in bee keeping for many years but never really had a place to do it. I knew a bee keeper who sold AMAZING honeys! My shop bought bulk from him quite cheaply, but he also sold some at farmers markets for crazy prices. His varietal honeys (he rented out the bees to farmers regularly) were very good, and the differences between varieties and seasons quite interesting.

I like to play and record music, write fantasy fiction, I've carved a few pipes and would love to do more. On Tuesdays I like to run down a busy street in the city, wearing a pink and purple poke a dot speedo while screaming, "Space alien ninja monkeys are attacking! Space Alien ninja monkeys are attacking! Hide your beans and bacon and run for the hills!!!"
