Does anyone have a "favorite" or "go to" tobacco for breaking in a new briar pipe? I've broken in a few and they always seem to have a sharp or bitter taste at first.

Everyone knows a good slathering of butter really helps break in a pipe and give it a nice toast flavor.
(Please, no one do this)
I usually just start with some VA's
