Beautiful! That broth will be amazing, I'm sure. You're kinda making me wonder where I can score some moose bones in the Tucson area. Might have better luck with Javelina!

Top part of a femur and a knee. Should be quite a bit of marrow and tons of cartilage and crap to render out. Hence the overnight, long low/slow approach.

I have high hopes. Made it a few times in the past but was never happy. This one already has the right “smell.”

This was the second time I made it, and it was much better than the first. I made a few modifications to the recipe (such as putting the spices directly in the broth rather than in cheesecloth) that had a positive effect, I think.

Also, when you strain the broth, and take out the bones, don't forget to eat the remaining marrow! The marrow from the beef bones was sinfully delicious once it had cooked in the broth for 5 hrs. Add a little salt, spread on bread, and WOW!

Let the kids have the choppin sticks...

I also cut my moose a little thick because I like it to stay somewhat raw.

In the semi-rural NorthEastern USA
I shot two caribou bulls this year as well as a moose, so there’s no shortage of meat.

Wasn’t planning on it, but ended up sending one of the caribou to the taxidermist.

The backpack that’s in this picture inside his antlers is a full-size frame pack. It’s probably 26” from the tip of the yoke to the base of the waistbelt. The waistbelt on it is 24” wide from inside edge to inside edge.

100% velvet from end to end. I couldn’t justify not sending this guy in to be immortalized, so he’ll be on the wall in a year, or so.

My first thought was of course it's a full sized pack. My second thought was also sure that's a full sized lawn mower too. Third thought oh not everyone has lived somewhere that has antlers hanging up on the walls (none that I put there, I don't hunt got cured of that bug early on.)
