Thanks so much for everyone's replies. You all had some great advice and gave me a lot to go on. I ordered some Capstan Blue, Galloping Gertie, Sutliffe red Va cake, and sutliff 515. They were all great. The closest out of the bunch for that tang/sour vinegar I was looking for was the red VA cake. All of the Mississippi River variations still have the most of that taste for me.( regular, rum barrell and special reserve.) Not sure what it is about Seattle Pipe Club blends but they all seem to have a similar punch you in the face vinegar tin note that I love. I was glad someone recommended galloping gertie, It is more sweet than tangy but delicious. I have on the way, Give me Liberty, Sutliff 507 stoved and flakes, plus Yorktown.

Rattrays Old Gowrie... and maybe just explore the whol Rattrays line of Virginia blends. These all have a natural acetic acid that I think you'll enjoy... especially after they have some age on them.

MacB Old Dark Fired has a slight vinegar applied as a mold inhibitor. I don't like this one much, because I find it boring, but you might like it.

The Ken Byron virginia blends Iv tried all were tart/sour/vinegary to the point where Iv thrown most of them away. Not for me.

There’s a couple I have hung onto still to try, but my expectations are low. Might be worth exploring those more if that’s what you are actually after.

Yep the reds in Old Gowrie and HOTW definately have a McClelland-esque vinegar tinge.

Just out of sheer curiousity....
Why do so many of you want your tobacco to smell and taste like vinegar..... Like what the fuck. Just go in your pantry and huff the vinegar bottle for a few minutes and it'll be enblazed in your nostrils for hours.

My feelings, precisely!

I grew up in Canada and love vinegar on my fries.
I love vinegar on fish.
S&V chips are probably my second favorite (after ketchup).

So it's not like I don't like vinegar.

...to eat, not smoke.

Keep that stuff away from my tobacco.

A year ago I was gifted a box of jarred tobaccos (mostly blenders). Included was 515 RC-1, so I had to try it straight, since it's tangy, nose-tingling tartness reputation preceded it. Definitely not for me, but it gave me a new thing to taste in blends.

Well, it just so happened that there was a small plug of Plum Pudding in there as well, which I hadn't smoked in over 6 years. While working through the few bowls it provided, I kept noticing that tart Virginia tang not unlike the 515 RC-1. Clearly, since Sutliff is making Seattle Pipe Club's blends, they are sneaking (or not sneaking) this vinegary tobacco into it. And I think there may be others as well, I'm just not sure which.
Vinegar the taste sensation of fermentation.

You might try Hearth & Home Louisiana Red (H & H is the brand but it's from Sutliff). It's a Virginia with some Perique. I get a distinct vinegar taste from the Virginia in it. I bought a pound from Pipes & Cigars and they had a bonus offer of a tobacco jar for $10.

Keep it simple and smoke good ole St Bruno, preferably in RR form where the vinegar saucing is more percent than in their flake offering,Bruno is a basic time tested satisfying tobacco with a dash of dark-fired Kentucky in it
