Plywood is the way to go in a garage. Drywall is just going to get banged up. And with plywood, you can nail or screw stuff to it without searching for the studs.

In Florida, we have the issue with heat- I added insulation on the garage door and put a 6"vent in the garage...makes all the difference in the world...Get 'er done! You'll be happy!

You could always go to a box store and buy roll fiberglass insulation and do it yourself. Standard widths fit between the studs. Just unroll, cut and stuff. Staple some plastic over it and puff away. You could always do the insulation yourself then have someone drywall it later.
