Unless there is a lot of headspace, tobacco will not lose moisture in a Ball jar. If the tobacco is already too wet, or too dry, I put a Boveda packet in, and leave headspace.
I find that almost all tobacco ships too wet. They ship wet for a mumber of reasons, but the primary reason is that tobacco is processed wet. Dry tobacco will crumble in process and handling. When I order more than 2 oz or so, I split it into 2 jars: One to smoke, and that gets a 62% or 65% Boveda, and the other is left as is until I need to restock the jar in the ready position.

It depends on a lot of things, the cut of your tobacco, the moisture content of your tobacco, and how tightly you pack just to name a few. Typically, a pint mason jar (for me anyway) will hold roughly 4oz of ribbon cut. That being said, I can fit that same amount of flake tobacco into a 1/2 pint jar.

I usually use the half-pint 8oz ball mason jars and can fit a 50g tin in there. I can usually get away with 2oz total in these jars.
Today, I bought a 12 pack of the pint 16oz ball mason jars to store this 8oz bulk of mississippi river. Didn't think it was gonna fit, but I guess the crumble cake form helped to get it all into one jar. If it wasn't a crumble cake, then I think it might've been 2 jars worth.
