I organize my cellar very poorly. I do have a spreadsheet where I track what I have and when it was tinned, jarred or mylar bagged and I mostly record when I open something. As for physical location it is all randomly tossed in a few large totes so finding any particular thing of interest is an Easter egg hunt.

How much would one charge to take inventory and make me a spread sheet? And would I have to over clock my computer for the amount I have on hand?

I smoke very little(about 3 to 5 tins a year) I've got 60ish tins and jars. At my age probably enough to see me out!
They are kept in a draw in my garage. No order or system.

I consider my cellar to be all sealed tins, and bulk tobacco in jars that I’m either aging or just not actively smoking out of. I have a very detailed spreadsheet that I carefully keep up to date. I keep the cellar in covered plastic bins, not only for organization but also to keep sunlight away from the jars. For my current smoking rate, I have something close to a lifetime supply. However, I don’t smoke that much, so that’s not much compared to what some other members have stashed. While my spreadsheet is up to date, it does not keep track of what bin a tin or jar is in. I’ve got them allocated roughly by time of acquisition. While not perfect, I can usually narrow that down for a particular tin to 2 or 3 bins and I’ll find it fast enough. Adding bin location to my spreadsheet may be a worthwhile project someday.

I have an old desk: the drop top is great for my most often picked blends and the pipe collection, one drawer for other regular blends, one drawer for aro's (not full, and the Capt Bob's is a problem even double sealed). The rest of the cellar is in various cardboard boxes around the apartment and down in the basement. Like many others here, I have a spreadsheet that I try to keep up to date; I also keep a word file to record smoking impressions and my latest resolutions to stop buying more.

Im not even completely sure where it all is. I remember bringing a couple totes to my dads house while we did some remodeling a few years ago. Jars are in one corner, tins in another....more tins somewhere else. Ive bought quite a few tins in the last 6 months. They are all in a big tote that I moved closer to my actual cellar, but its not quite there.
A few open jars and tins in my coffee table for quick access.

How do I organize my tobacco cellar? N/A.

In the basement I have a spare kitchen cabinet with 2 drawers stuffed with jars and tins: both for long-term storage and because what my wife doesn't see, doesn't exist.

In my office area I keep a large bin which was originally my rotation: a bunch of jars and tins I am likely to open in the near future. But I've acquired a lot more this year, so the bin is stuffed with tins and bags, and on top are 5 or 6 flats of jars, and a few boxes with mylar bags too. I'm in the process of reorganizing the basement, and looking for a good tobacco cabinet to put down there; this winter's project will be moving a lot of tobacco to the basement and organizing it in a more sane way.

I don't worry much about amounts, but I keep a text file with a list of all the blends I currently have, to prevent myself from buying more of a blend I haven't even tried yet.

In the early 2000s, I worked at Control Data in MN, in the building where Seymour Cray worked and with some people who knew him. It was a memorable experience.

I heard many interesting stories about Mr. Cray (who passed in 1996) from my contacts at their Chippewa Falls, Wisconsin facility.

This all looks very familiar. I've been collecting for 30 years, and I live in a 1910 farmhouse. The rafters in my basement have wine boxes that are full of tobacco tins. I also have cabinets, and file cabinets, similarly filled with tobacco tins. It's a strange hobby. I need to downsize because I smoke about 3 tins a year. Fun stuff.

Some of your collections look like they have more tobacco than most tobacco shops.
