I don't think m it is just ash stuck to honey. The honey should heat and burn as well, and produce carbon, the main component of cake. Just like certain tobacco produce certain types of cakes, honey will produce its own, maybe not the hard thin cake of a Virginia, but porous insulating carbon anyways.

I'd a lot rather put a thin coating of honey inside my pipe bowl than a harsh chemical like alcohol.
The honey does help ash and carbon form on the side of the bowl, and, being basically sugar and water, itself dissolves over time.
