The guy is out to lunch in several ways and certainly would not be a candidate for my business.

I can't patronize my local pipe shop because the guy who owns it ought to be a Batman villain (Two-Face). Judgemental in ways that would offend many of us, and dishonest. Not worth further discussion.
The OP's post reminds me of Hall of Fame Baseball manager Joe McCarthy, who hated pipe smokers, and was known to trade them away. He once said, "At the front of every traffic jam is a pipe smoker."

Pipe smoking can be deliberative, where there are long pauses in the conversation, sometimes denoting

deep thought. So I guess that's the stereotype this fella is accepting. Then there is the Sherlock Holmes

pipe smoking model, where Sherlock is getting cranked up on nicotine to make his mind speed up so he

can apply his already powerful intellect even more intensely to the mystery at hand, which is the opposite

of the ruminating professorial pipe smoker. Then there's the Shelby Foote pipe smoker -- he's the Civil

War historian who became somewhat famous after appearing in the Ken Burns Civil War documentary --

where his comments are gently and precisely put, but so insightful, you don't mind the slow delivery. I agree

with the post(s) above that suspect the tobacco shop owner just doesn't want to learn pipes, and this slow

thinker excuse is just a rationalization. If he gets interested in pipes, he'll change his story. Rarely are people

consistent when it comes to their prejudices.

the problem with a lot of B&M owners is they are not businessmen but hobbiest who thought because they knew a little about cigars and/or pipes they could run a business but found out it's way more work than standing around shooting the breeze.

Although the shop I help out in is selling more cigars than pipes or pipe tobacco we still cater to pipe smokers in ways you'll not find in the 2-3 other B&M shops within 25 miles. We will take the time to get a beginner off on the right foot because we want to see him/her back in there. We have maybe 100 pipes to pick from and there's something in every price range. That all being said I can tell you that some potential buyers do take their time looking at pipes and don't always buy but many do eventually. Then there are the ones that come in and say, give me that one and that one and oh! I need some tobacco and by the time he's done you have a $300-$500 sale.
That "tobacconist" is shooting himself in the foot IMO.

I plead guilty to the slow-moving pipe purchasing habit. Worst case at my local independent B&M, I admired a pipe

on one visit but put the pipe back on the wall, but it worked on me, until I came back weeks later to buy it if it was

still there, and it was, and I did. It was an ample bowled LaRocca poker with folksy carving on the briar, and I finally

decided, I guess, that I didn't mind being folksy now and then. Apparently others were put off at first too, so it

remained there for me. It's a good smoker, and a good long smoke.

I can't fathom the idea of shutting off a revenue stream because of a personal dislike. Personally I dislike Candadiens fans (and really what civilized human being doesn't), but if someone walks in my motel with a Habs jersey on you can bet I'm going to be rent them a room and give them top service because as much as I dislike the Canadiens (Bruins rule), I downright hate not being able to pay my mortgage.
Of course it could be that the guy started his business undercapitalized and cannot afford to tie up anything in pipes, and would rather look like a jerk than look unprepared.

Is that quick and succinct enough? Although it does put me in Peck's category number one....

"Those who think "slow" rely on deliberation and logic and form judgments based on effortful attention to the question under consideration."
That is why, when I was selling cars & trucks in a previous life, I didn't like taking a customer that was smoking a pipe and carried a legal pad.

I was recently in a B&M pipestore (name withheld to protect the guilty) and was totally frustrated. As I was driving away I saw a guy at a stop light smoking a pipe. I gave him a wave and he [slowly] lifted his pipe and gave me a smile. Obviously we can live without them but bless those who do it right!
