Turkey is the most traditional meat but I think people aren't stuck on that anymore. My brother can't eat turkey so we usually had roast beef growing up.

Whatever veggies you harvested. That's kinda the point, right? The harvest?

Ukrainians are going to be eating cabbage rolls and pierogis. There's a lot of Ukrainians in Canada.

Back bacon sandwiches and poutine, all washed down with Labatt's Blue, of course. For dessert - butter tarts.
Labatt Blue? maybe 10yrs ago before they ruined it. Gotta be Moosehead buddy.
Er, ah, what is the quintessential Canadian meal at T-giving?
Something we harvest ourselves, but unfortunately our GOV starts Turkey season a week before T-Day, not leaving us much time to hunt one, and that's only with a bow, shotgun doesn't start until middle of the month.
Oh yeah, and it must be deep fried. Easy to crush a 2-4 while waiting.

I hope it was a bright Maple Leaf day for you. I'm glad it wasn't Thanksgiving here because, in central North Carolina, all we got were flash flood warnings, but brighter days are ahead next week.
