Larger pixels mean more information/detail available for the software, dependent on format. JPegs are severely in the amount of information contained in the file and so cannot be heavily manipulated. Larger pixels allow for bigger enlargements, more serious cropping, post-shooting manipulation and such. Which is why larger format cameras, shooting "raw" are still preferred by commercial shooters. Those pixels, no matter their size, still must be handled by software and phone cameras have made great strides in recent years. If scenics are your preferred subject, most any of the newer phones will give you great shots with good to great colors, able to provide good quality up to 8x10 and, often larger. Phones are, for most folk all the camera needed, even on a once in a lifetime journey.
Remember though, the ability to visualize what you want in a finished shot (the purpose) is determined between your ears. That, to me, the most important piece of "photo" equipment to develop,
