Phil, to answer your question, the meat tastes completely different. Also different color and texture. This is true of all game vs farm raised meats (and all farm raised vs industrial raised meats). I am saddened that so few have tasted natural meats. Wish I could just send some to everyone. Most people, at least in the US, go their entire life only tasting industrial produced meats. I'll spare you the details on how they are raised.
Yep it tastes different, but good. I am using a 7mm-08. And I have an XD-9 with a 17 round mag as back up. My buddy is hunting with me he also will have a rifle and pistol combo.
Good luck ! And to answer the question, yes FOR SURE I know several east texas boys hunt them with a knife. You've got to have some damn good dogs and you will eventually lose one to a pig. They make Kevlar vests for the dogs, that can save lives.
Several ways I know to do it. One is with a heeler. The dogs get a pig at bay and take him by the ears. A buddy will grab the hind legs out from under him and the hunter will pick up a front leg at the same time and go under it with a knife to the throat.
Another way is to bay the hog and when the dogs have him go straight through ribs to the heart.
It is close and fast action, and it can go wrong real fast.

Never been Hog hunting, but I got my first Bear when I was 15 yrs old, with a 12guage and slug. Single shot too.
I would love to hunt hogs one day with my Marlin 45/70 with my own cast bullets. With my Ruger Redhawk 4" 44mag as backup. Those scurvy things are coming this way too. Oregon just recently started a season on them. Washington is next. They came from California too. Kill em all!!!
Well no hog, the woods were tore all up, they are out there but didn't see any, however I hit a deer on the way there this morning and the thing got up and ran off before I could shoot it. So i got a busted headlight, dented hood, and broken blinker and nothing to show for it. Could have been worse though I was going about 60mph when I hit it.
My car wasn't pretty to begin with, but now it has even more character. I just got replacement lights on ebay.
See? Hog hunting is dangerous!
I'll be going someday with my brother-in-law, but unless he loans me a rifle, will be using 20ga slugs. I'll get in close, and I will have a backup revolver.
