Friend used to have a 3-hat French restaurant in Sydney.

He also did an impromptu dish - a chawanmushi (Japanese steamed custard).
i brought along some crispy chilli sauce and he thought the contrast of textures (delicate custard and crunchy chilli) would be interesting.
And it was.
