Okay, I am kind of a weird wing guy in that I try to keep them as healthy as possible, while not having to go through too much trouble to make wings. I roast whole wings in my oven at 425 degrees until they are basically as crisp as if fried (maybe forty minutes), remove them and turn off the oven, and then brush them with sauce. Then I return them to the still warm oven to finish/cook on the sauce. Staying with the healthy sauce theme, I usually use a straight vinegar based (low cal/no fat) hot sauce like Crystal, Tia Lupita (my fave when I can get it), or Frank's Original and then tweak it for hotness with a bit of Dave's Insanity Hot Sauce. My fave of these is a mix of 90% Tia Lupita with 10% Dave's Insanity. Pretty healthy wings with a fair amount of heat in the flavor.
