It needs a few days just to "settle down" enough to be smokable, but after a month or so the flavor is pretty consistent from that point forward. A word of caution, in the last batch I made I used too much honey and the end product was slightly sticky and it burned slightly hot. The casing shouldn't have the viscosity of a syrup - it should be watery, with just enough honey in the water to flavor it.Thanks for describing this process.
