You folks have already mentioned most of my favorites, but I'll add a couple more actors that I enjoy: Ethan Hawke, Matt Damon, Leonardo DiCaprio, and Viggo Mortensen. I don't love everything they do, but I like a lot of it.
As for actresses, I like Julia Roberts and Kiera Knightley. Many others, too, but those two come to mind right now and have not been mentioned.

Must have been some lean times.
I've heard that Connery did "Zardoz" specifically to break out of the James Bond typecasting he was worried about... and IMDB quotes Boorman as having been able to hire Connery cheaply because he was having trouble finding non-Bond roles at the time.

These have been mentioned before, but after Daniel Day Lewis and Meryl Streep it's a steep fall in my mind to the next tier. I have to admit, I warmed up to Johnny Depp's abilities after seeing him in Ed Wood many years ago, but, for me, no two actors inhabit their roles like those two.

Many good actors here. Vince Vaughn is another of my favorites whom I don't believe has been mentioned. I also really like Matthew McConaughey, Jacquin Phoenix, and Liam Neeson. I enjoy Sandra Bullock's work as well, she can be extremely funny.
