For a few generations now my family has always had pumpkin pies at this time of year. That’s as far as I go with the stuff, and while I love the pie, I won’t miss the passing of the “pumpkin spice” fad.

I like pumpkin spice coffee. I am a bit surprised there's a pumpkin spice aromatic though knowing about captain black grape being a thing I shouldn't be.

While autumn is my favorite season (got the multi-colored corn cobs and decorative gourds out on display in the kitchen), pumpkin spice is the one thing pertaining to it I tend to avoid. All too often, it is augmented with "natural flavors," which are ostensibly the powdered anal glands of beavers.

Seriously.

To me, it's difficult for anyone to make a good pumpkin pie; they either have to be ingeniously spiced so it is both subtle but pleasing or it has to be sweetened just right. I say no to almost everything else pumpkin. It's death to a beer, and most other food products. In a tobacco blend, it is a practical joke. It doesn't hurt. But it disgusts. So I'm a no.

I like pumpkin too, though it can be a pain to prep. My favourite variety is probably Hokaido, great ones can taste like chestnut.
In terms of pumpkin pie, over here it is usually grated before being mixed with eggs, nutmeg and cheese and baked as a quiche, or sweetened with sugar.
As for myself, i like to cut them in half, scoop out seeds for later salting and baking, bake until flesh is soft, pass through a sieve, mix with eggs, sugar, cinnamon, and cream and use that as filling, sometimes i will cheat and add some sweet potato to give some more nuttiness.
