Isn’t that similar to bear? My friends who hunt say that once you’ve downed a bear you have to keep it cold due to the parasites.

I’ve had bear and it’s not for me. Very stringy stuff. Venison and elk are great though.
I've had black bear at a game dinner. I don't know how they prepped it but it was served as steak. While grey in color it tasted like a sweet filet mignon. I would order it again if I saw it on a restaurant menu.

Different strokes for different folks. A lot of people love eggplant but that awful plant can go straight into the garbage. Bear meat can go there too lol

They lied to you.

Carp needs several cases of Old Milwaukee plus a half gallon of Old Crow added to the crowd before the carp is ready to eat.:)

And wild boar has trichinosis.

Maybe Arkansawers would serve possum and wild boar, I have no idea.:)

Crappie and bluegill (or other perch fish) are reserved for your family. They are highly prized.

Catfish is company fish.:)
I grew up on a river with carp in it and I can attest that carp are disgusting. Just the worst fish to eat. Fun to catch though. Put up a nice fight.

The U.S. Fish and Wildlife Service has issued an invitation to hunt and fish and eat invasive species of animals that are harming our environment. Has anyone tried any of these delicacies yet ???

" .... so you’re not just getting a great meal, you’re doing conservation work with every bite."

Maybe Iguana try some ...
won't eat lantern flies. I will kill them. One of my favorites of the work videos we have to watch was the one about lantern flies. What I loved about it was the older hippie lady gleefully talking about the ways you can kill the fuckers. Drop a book or brick on them.

The only one I would hesitate on would be the carp, but I've heard there are some good recipes out there, so...

Haven't had these, would try all, but would only stock boar in my freezer.
Wild boar is well regarded in Germany; I ate wild boar steak there many many moons ago. It was pretty good, from what I recall.

Eggplant has to be prepared properly. The juice can cause the runs. You have to slice it fine and layer it between paper towels in a collander then put a heavy weight on top and let it sit all day in the sink to squeeze out all the liquid. When done season and bread it and its fine. If you don't do that well, then, good luck ! 🏃‍♂️ I'm not a big fan either but can tolerate it on pizza on occasion.

Snakehead is very, very, good eating. My dad's younger brother was found of fishing for them in the abandoned mining pools around Kuala Lumpur, Malaysia. Snakeheads are ambush predators and you have to dangle your bait right in front of them. Dad and his brother are dead now and I sure miss them.

Sounds like a lot of work for something that should be thrown away…same with squash!

But I’m honestly kidding about this stuff. I don’t want to dump on people’s joy as we all have our preferences. I just didn’t like bear meat the few times I’ve had it and I’ve never liked squash or eggplant, yet I personally know a lot of people who love those.

I agree but have a slightly higher tolerance for them. I do like fresh squash with black pepper as one side to a chicken dinner though.

One of the good things about growing up poor in the South is you learn to eat just about anything. Pretty much anything that could be hunted or caught, people on the bayou would eat it. Alligator, garfish, wild pigs or boars, nutria, different types of catfish, even raccoon. We did draw the line at eating possum, though.

I have had black beer stew, antelope, venison, elk, turtle and a few other "exotics" but I've turned down eating any type of snake.

I personally don't eat blue or Dungeness crab though. I was traumatized early in my Coast Guard career when I worked a case where we pulled a float plane up from the Puget Sound. The plane was loaded with crabs and the deckhands on the commercial bar was filling up baskets.

I’ve had wild hog. A cattle rancher had a bunch on his property & there isn’t a season or limit, as they’re invasive. He’d bring one by every so often. They were field dressed but I’d have to skin them. As luck would have it, the bbq restaurant attached to our brewery would smoke them for us. They weren’t bad, a lot leaner than farm raised. But pork fat is where it’s at. Still better than just killing them & letting them rot. I haven’t tried nutria or python, but I’m sure they’d be palatable if cooked properly or with enough hot sauce
