I unintentionally started with a tiny pipe, and 8 years later I've almost trippled the size.

I do medium-small apples/billiards for shorter smokes, but when I have time to enjoy I'll go for medium-large or large. Straight or bent, though usually bent, since it puts less strain on the jaw & dentures if I'm clenching. On full bents I usually enjoy large bowls, clench or no clench. :)

Size matters most for comfort and length of smoke, but the dimensions do affect the flavor, sometimes in unexpected ways. Your experience may well defy conventional wisdom and I the case of certain blends, even defy your own experience. Buy pipes that appeal to you and that you find comfortable, then find the blends that smoke well in it.

The old joke answer to the question, "Does size matter?" was, it depends how you use it, which applies to pipes too, I guess.
