Hi, I know some teeth chatter is inevitable, but why is my Peterson's going so discolored so soon?

Welcome to the forum.

That is inevitable oxidation and easily removed with 4/0 steel wool, or other means like a paper towel soaked in Everclear.

A real vulcanite stem oxidizes.

All part of pipe smoking.:)

A real vulcanite stem oxidizes.
Quality of vulcanite varies but the higher the sulphur content, the faster it oxidizes. If kept clean and oiled, oxidation can be kept away. I've has this one for 31 years and have never had to remove oxidation. I've just kept it clean and oiled.
