Up till just a few years ago, we raised rabbits for food. The pelts were actually worthless. Hours of work for three dollars, phhhht.
That said, I would not eat a rabbit that I had found dead. Rabbits just don't die like that, unless poisoned or diseased, and that one doesn't look like it was dying of disease.
