Looks delicious! Here in Pennsylvania we have something similar called hogmaw, which is sausage and potatoes stuffed in there, and it's typically served at Easter alongside the ham. Ours is definitely not Cajun spicy. Enjoy!!
At first glance looked like fried guinea pig to me, but the second pic. convinced me 100%.

Makin me hungry. I haven't heard of this dish, but enjoyed the hell outta the boudin down in New Orleans last time i was there.
