Anybody have any idea how much flake
one of these jars will hold?
I used to use very large wire top jars, but I cannot remember what size I had in terms of gallons, but they were big old suckers, would hold all or almost all of a 5 lb bag of flake, and worked fine for my purposes. There may or may not be alternatives that would be better for your needs, but if one of these holds enough, it would suit me fine.

I would use mason jars only because the seals are tried and true. If you are comfortable with the seal on those containers go for it , just hate to see your tobacco dry out.
