Wow L you are into some serious peppers! I do like fresh or dried peppers for food additives or salsas but I don't like eating them right off the plant or fresh picked. I find when I eat them like that they upset my stomach a little bit. I don't seem to have an issue digesting really hot sauces or adding extracts to dishes. Hot sauce tasting is something I've tried but after the first 5 or so I was in quite a bit of pain and didn't really enjoy the rest of the tasting. When I buy a new sauce or rub or whatever it may be at the time I don't add it to anything, I take a teaspoon from the drawer and have a nice taste so I know what to expect in whatever dish I add it too. I enjoy the being a pepper (sauce) head and I really appreciate all the pepper growers the world over for continuing to provide insanely hot fruits of the earth!
@ Lawrence: Too bad I couldn't use some of your peppers in a pot of chili I'm making for a hunt camp return. Most of my hunting buddies are gone away for the week for the Controlled Deer Hunt and left me in charge of saturday's return home dinner. They left me 4lb of ground venison, 2lb of bear cut into chunks, and a hunk of moose about 3lb. They all voted I make a pot of my chili again since everyone liked it so much last time. Last time I added half a bottle of Lethal Ingestion and 4 fresh cayennes finely chopped and as always, never beans. It was a hot pot and there was no left overs but a couple complaints about 'the day after' lmao!

While not the hottest peppers in the world, smoking some red jalapenos on the grill, singing and peeling them, and then crushing with mustard seed and fresh garlic makes an amazing chipotle sauce, way hotter and more flavorful than you'll get in any American restaurant.
And, smoking them has the neighborhood's eyes watering, LOL. Nope, the smoker is not a Savinelli, ha ha!!

That looks amazing cosmicfolklore!! I love smoked peppers too! I have a sauce made with smoked Habanero Peppers and it's SO good!

I sometimes smoke habaneros in rosemary. It really brings those floral aromas out of the peppers. I don't make those every year, because my girls all think them way too hot (if they know they're in there), but added to some olive oil, it makes an excellent seasoning for grilled chicken and pork.

I cold smoked half a dozen varieties last fall with apple wood.

They make some tasty tid-bits with dinner.

I cold smoked them at about 80° for about 18 hours.
