Hello, I want to buy one of these pipes, but there is a selection of bowls. I assume the bowls do make a difference and aren't just for aesthetics? Could someone tell me about each bowl please.

as far as I'm informed conical shaped chambers goes well with flake tobacco, yet some are affirming the narrow tall bolws usually do perform well with these tobacos and with ready rubbed tobaccos as well.
The outside shape is aesthetics; the chamber size, shape, and ratio has an effect on different tobaccos, though there are no set rules. I think tall, narrow chambers are best for Virginia tobaccos and flakes, and wide 1:1 ratio chambers open up really complex tobaccos. Conical chambers concentrate the flavors more. At least, that's my experience. There are thousands of different opinions on the subject.
