A Szechuan dinner last night with 5 friends.

Most of the dishes were immersed in at least 3ins of oil, making it difficult to distinguish one from another 😏

Tetsuya is one of the great chefs of the world and I have only eaten his fare once and it was truly memorable. I have to ask, was he your chef or was he part of your party Ray?
Part of the party.

I’ve known Tets ever since he started out on his own in a tiny restaurant in Ultimo, Sydney. And we have been friends since.
Sadly he closed his Sydney restaurant. He had a offer he couldn’t refuse for the site from a developer
He has just opened a restaurant in Dubai, as well as his restaurants in Singapore and Los Angeles

Madeira paired with that food sounds really nice!
I like pairing sherry and madeira with food

There are styles from dry to very sweet, so given a bit of thought, you should find a match.

The problem with dry sherry is that some people may have difficulty with the aldehydic flavour profile.
A dry fino or better still, a manzanilla, is a great match for oysters and seafood which abounds in Oz

Been asked too many times if I'm from Szechuan. Not because I look like Szechuan, but because I eat chili oil like Mexican.

乾烹鷄 is rather popular. Not Szechuan, but can be very spicy.

I've been too long in Oz.
My tolerance of chilli and hot food has sadly declined.
Now I feel I'm being punished again the next day - heat going in, and more heat coming out :rolleyes:

I never thought to pair sherry with oysters but it sounds great.
Freshly shucked oysters with their briney flavours and a bone dry sherry is a heaven made pairing

If you have to wash out the oysters, collect their juices with a sieve, rinse the oysters in their juices. Never tap water

I shudder when I am at a fishmonger when I see them shucking oysters under a running tap. The thought of all the flavour being flushed down the drain

His Singapore restaurant, Waku Ghin, is in the Marina Bay Casino complex.
Catering to high rollers is obviously paying off - S'pore, Vegas, and now Dubai. 😁

If you do get a chance to eat at his restaurant, please do.
