    Tri-Tip Dry Brine Experiment

The wrap would be a paper wrap not foil. I usually lay some strips of thick cut black pepper coated bacon on top for added moisture and flavor but I'm trying the brine this time. I'll be using Bad Byron's Butt Rub which has salt for the seasoning tomorrow so it's kind of a 2 stage thing. I...

    Tri-Tip Dry Brine Experiment

I've had pretty good results just seasoning and smoking tri-tip but for tomorrow's party I'm attempting my first ever dry brine. I'll season and let these come to room temp for about an hour before they go in the smoker tomorrow. I'm also thinking of letting them stall and then wrap them like...

***What Are You Smoking, June 2024?***

Jim's Special Flake and if you like sweet cherry aromatics Fallen Cherry. These and Sakura are all I've tried so far and I cellared them fairly deep after trying them.

What I Dislike About Smoking a Pipe

I don't like that I have to pay for my pipes and tobacco. I'm good with everything else.

The Longer Stem The Cooler Smoke?

Myth. Most stem materials have good insulating properties making them ineffective at cooling over the distance especially considering how quickly the smoke travels through the stem. Nice pipe though. I enjoy churchwardens myself.

    Smoking, Grilling, and BBQ

Found some boneless chicken thighs in my freezer I forgot about. They looked like they were still in great shape so they're in the smoker right now. Hit them with some cheap chicken and poultry seasoning I found in my cupboard. I'll finish them with a BBQ sauce after smoking. Then I'm hitting...

    Hot Dogs.

I still like them cut up and mix into mac n cheese. Or grilled is good too. Heck, I'm usually just hungry and lazy and eat them straight from the package. And let's not forget corndogs. Best ones I've ever had my brother gave me and were caribou and came from a butcher in Alaska. I'm really...
