I call this Ragu, some call it Gravy or Sunday Sauce. It’s braised beef chuck roast, pork shoulder or butt, and I add sausage. Pecorino and parsley to garnish.

Rigatoni with crab sauce and parmesan
No pix. Been cooking on carbon steel of late. Dinner was hash brown and two eggs. Dang hash brown was an work of art!
Hadn't dug this deep into my southern pocket for a while, but I got a good deal on some scrap pieces from the butcher this week and I couldn't resist.

To hell with turkey, Thanksgiving dinner was a big ass ribeye. 
Sous Vide at 165F, brush with butter, dust with garlic salt. Yum
I always get anchovies on the side and place them on after baking. It prevents the pizza from tasting like a salt lick.
I never had anchovies but thanks for the tip if i ever find the courage to try them ill have to do it that way.
