All the borage, but it's mostly garnish. What I am really after is the pig
Mushrooms, carrots, garlic... red wine is the base. All homemade and slow cooked in cast iron.

So true. It's one of the game meats you can slip someone who doesn't do game meat and pull the surprise that's game meat on them.
I feel like it's the closest to it's domestic counter part of anything I've tried.
I like all game meat, but I would agree... grilled Venison is on the menu next weekend LOL.
I still think the best one I've had was caribou. I still remember the first farmed turkey I ate and thinking people prefer this... THIS?
