Based on your previous food posts, I was thinking you'd be smoking meats this morning.

I have a small, electric smoker and grill that self-regulates the temperature to keep it low and slow. The grill setting heats higher for a decent char, but not as hot as charcoal or propane.

Typically, I break it out on the weekends and smoke various cuts of meat and a variety of vegetables. Pork butt, ribs, chicken wings, corn, and onions are a few favorites. It can be an all day affair but the electric regulator allows me to step inside with nominal monitoring.

It's just too cold to break out the smoker right now, but I've got some pork butts and ribs in the garage freezer waiting for spring to come.

I need a smoker - i bought one last summer but it was DOA - returned it and didn't go back yet. Today I will be whipping up a Baked Ziti from scratch. I am getting ready to brown my spicy italian sausage :) . Winter time is comfort food in my house, Lasagna, Rich Curries, Stews, Roasts with some shrimp and scallops tossed in now and then. Damnit! Now I am hungry! lol

There's a video on YT where a guy makes a smoker out of some cinder blocks and a few other things for about fifty bucks that we thought was kind of neat and might try instead of spending a lot on something like an Egg.

I need a smoker - i bought one last summer but it was DOA - returned it and didn't go back yet. Today I will be whipping up a Baked Ziti from scratch. If you have any braised chicken ideas, please send them my way. We have a non-red meat eater in the house (bah humbug) and I'm always on the hunt for a legit dish.

While I enjoy curries (and will go all out with fresh cilantro, limes, yogurt, and chutneys), others here prefer chicken and gravy (which is good, but I enjoy a variety of food and flavors).

I'm debating whether to make a shrimp scampi (redundant, I know) served over polenta cakes.

Just google Braised Chicken recipes... there's a plethora of them

Ahhh - Sounds like my brother's family - he laments not having my cooking all the time as his family is into bland stuff. Bland is OK, but not all the time. Alas, I do not cook much chicken unless it is in Tetrazinni. My wife does the chicken dishes and it's usually curry or Asian stir fry. As Monty says google is very useful for recipes. I do it all the time BUT I almost always change them a bit to suit my tastes, usually by adding more ingredients OR using freshly ground spices etc. Yesterday I hammered ginger and garlic cloves with a mortar/pestle to make a paste!

I think this thread has definitely gone off the track
I've said it here before I think, "almost all conversations i have these days lead to talk of food and drink." Simple things are the best. As a kid I remember wanting to be rich, a nice car, awesome house and all that. Now I just want a good meal followed by a walk in the woods with my dog and a restful nights sleep. Getting old is funny that way. -peace

I'm with you brother. I love to cook, do it all the time. Have a daughter who is a Chef.. a grad from culinary school. ex-wife was a certified cajun and is a great cook. My parents were great cooks, and we always ate new and creative dishes at home, so it's pretty much in my blood. Been doing some Thai green curry from scratch lately using a mortar/pestle. My only problem is finding Cilantro root, not easy to locate. Keep on cooking my friend!

I've said it here before I think, "almost all conversations i have these days lead to talk of food and drink." Simple things are the best. As a kid I remember wanting to be rich, a nice car, awesome house and all that. Now I just want a good meal followed by a walk in the woods with my dog and a restful nights sleep. I was just thinking that the other day. I always wanted the “best” of everything and am happy to say I did achieve a lot while working. But now, at 66 and retired, I‘ve made the decision to simplify almost everything.
I sold my 3- story house in a heavily congested area and am moving (hopefully) to a 1-floor home in a very rural area.
All I want to do now is settle in, continue my love of cooking, play with a couple of my hobbies and smoke my pipe while looking up at the stars.
