@mawnansmiff I smoked a proper English cheddar this time:



Cut into smaller pieces for more surface area:



Loaded and ready:



Smoke starting:



6 hours later:



There is some serious smokiness here! It should mellow to a perfect level over the next few days.

I'd think the cheese would get pretty dry that way.
