Syrup time in N East USA and Canada. When the nights are freezing and day is above, the sap starts to flow in the sugar maple trees. A hole is drilled approx. 3 in. and a hollow metal tap installed that allows sap to. drip into a covered bucket. Modern collection is done by plastic tubing and a pump. The amount of sap needed to produce 1gal of syrup is about 40 gal. Sap is slowly boiled down to a syrup a little less thick as honey. The first run is a lite amber color and starts to darken during the short season flow. We look forward to pour maple syrup on buckweat pancakes or waffles. What a treat after cold long snowy Winter in my part of W. N. Y.
