I'm just starting on this adventure of pipe smoking and am finding it hard to pick between blends. I have tried captain black white pouch and some rum and maple. Both seemed mild and almost as if I was smoking cigarette tobacco. I have a tub of some tobacco that smells Like a camp fire and I cough smelling it so i fear smoking it. Any suggestions would be very helpful.

Don't be scared of the "campfire" smelling tobaccos. You might be surprised at how they taste. When my brother started smoking a pipe all he wanted was aromatics because of the way they smelled. He didn't fall in love with pipe smoking until he tried English blends.

I love rum especially Captain Morgan. I've never been a huge fan of whiskey but nothing's out of the picture. I'm looking for a blend just full of flavor thay has a really pleasant aroma. My wife loves the smell of cigar smoke but so far has just said the tobacco I've smoked has smelled like cigarettes.

Might also want to try Middletons Apple, if she likes the smell of cigars and you like cigars why not try a cigar blend like C&D Billy Budd.

I've been looking at the captain spice I may have to order a few ounces and break in the estate pipe I'm restoring.

I would focus on 2 blends from 4 different categories. The list I am giving you is readily available at most places.
Virginia Flakes= Wessex Brigade Campaign Dark Flake and Orlick Golden Sliced
Virginia Perique Blends= Escudo and GL Pease Haddo's Delight
English Blends= GL Pease Caravan and Frog Morton on the Town
Aromatics Boswell's Christmas Cookie and Berry Cobbler
This should give you a baseline for the 4 categories of blends and then you can branch out from there based on which ones you like and why.
A great resource that I have used for many years is tobaccoreviews.com.

Strange that Captain Black white smelt like cigs? That tobacco usually gets nothing but high praise from people when I smoke it. Only thing I can think of is if your smoking it to hot. Does the bowl of your pipe get hot on outside when you smoke?

It gets warm but not to hot to hold. It may be that the pipe im currently using is poor quality. Im hoping to finish this restoration soon so I have a decent pipe. Oh well I am just going to keep trying blends till I fall in love.

Much depends upon what you like. English/Balkan/Latakia blends are quite different from Burley or Virginia blends, or even straight non-blends. If you are new to pipe smoking, I usually recommend avoiding the former; Latakia is a strict mistress who demands allegiance from her followers. If you want a good everyday non-Latakia smoke, try something like Carter Hall, an often maligned "drug-store" tobacco, one that gives a good , mild, smoke without bite. I also like Bald-Headed Teacher from 4Noggins, which is a good introduction to Latakia without diving into the more complex English/Balkan blends. If you want to jump into that wonderful, deep pool, try Frog Morton, Plum Pudding, or Mississippi River. If you really want a good, true English blend that is a step up from that, Westminister. My recommendations only.

If you find that you like latakia blends... the worse it smells the better it tastes.
Key Largo is my current fav by G.L.Pease. It's beyond my description.
Not heavy, but complex and tastey.
No bite.
Smokes effortlessly.
