I'm looking for demographic information about pipe smokers. What kind of people are smoking them? How many? What parts of the world?

Do you know of any such data?

maybe set up a survey link here?
obviously it‘ll reflect pipe and pipe tobacco enthusiasts more than your average everyday Codger ( of whom I Count myself whenI’m smoking Pegasus out of a cob day in and day out sometimes) but you should get some interesting data and you can share your results…
I’m an info freako there is no end to what I want to know

No. But, if such info is of enough interest for you to do the leg-work. Start with retailers, B&M's and mail order. You might develop a questionnaire for customers to fill out. Then you need a method to collect the data. Post? Email?

I wouldn't look for anyone else to do the legwork. Ball is in your court. Perhaps you could sell the tabulated results to blenders, wholesalers, manufacturers and the like to use for marketing. Retailers and manufacturers probably have a reasonable feel for their markets already. But, a dealer of any product can't have too much info if it is used, key word, intelligently.

The difficulty with getting data like this is that the only place to seek it is on forums like this one, but the forum has already "filtered out" pipe smokers who aren't motivated to talk about pipes on an online forum (which is presumably the majority of pipe smokers).
I'm one of those types who isn't very motivated to talk about stuff, mostly lurking, posted enough to get some kind of basic post count so I can buy pipes if one comes up that I want and so I can see maybe news about pipes and tobaccos or possibly learn stuff I don't know. I'm not one that likes to talk about stuff much at all. I'm not a fan of people in general, but you have to try because "we live in a society" or whatever.

I only occasionally post in a thread now other than the "what are you smoking" thread.

So, while there might be plenty not here because they aren't the type to circle jerk about what they're into, there might be some like that who are here for other reasons and just lurking.

I think the health stats would not break down more than smoking and non-smoking. Cigars and pipes would be lost under the much greater numbers of cigarette smoking and vaping. The best indicators might be from the large online pipe and pipe tobacco retailers and the pipe tobacco companies themselves, but their data would not be shared with the public. Anything you could find would be impressionistic and not that solid.

My guesses would be mostly men, mostly over fifty years of age, mostly middle income, mostly urban just because the population is mostly urban, mostly high school and above in education, mostly married because that denotes being settled in place with a place to smoke a pipe, mostly with kids for the same reason. I suspect in the U.S. a predominance east of the Mississippi where habits are a little more traditional and historical. But my guesses are just hunches. People in the eastern U.S. seem to have better luck in yard sales, antique stores, flea markets, etc.

weirdly I've had more young woman make serious inquires about serious pipe questions. The how to do it, how to acquire it. Usually with a slightly nerdy bent. And it's weird young woman used to just tell me they liked pipe smokers but now they're actually more interested in the pipe then in the smoker. I guess I am saying it could change at any moment. And it's funny too that in older people pipe smoke seems more of a thing for traditionalists and in young people it seems the opposite as in people who want to push the boundaries. So my take is at the moment it's mostly older men but in ten years it will probably be more spread out. And I like that people notice things like a cig smoker my age would show a lot more wear then a pipe smoker my age does. I can still run (I hate but I can do it, if you see me running follow me cause either something really bad is behind me or something really good is in front of me), I don't have that wrinkly skin cig smokers get. I think there are two big factors in becoming a pipe smoker over other ways a person could use tobacco. First is the initial investment. 30 to almost 100 dollars is a lot of cash for something that might get used less then ten times, next to nothing for something that is going to be used constantly for decades. Second is knowing how to do it. I think both lend towards being more friendly to slightly older people. And that first pipe you don't even know what to look for or what to smoke out of it.
