Saw some great looking salmon at the store Friday, my wife loves it, I bought it. Prepared it last night. Set in a baking dish over a little butter and Tuscan flavored olive oil rub, brushed with a mixture of butter and lemon juice, topped with minced garlic, dill, salt and pepper. Some slow cooked potatoes on the side with the leftover butter and lemon juice poured over when it was served. Pretty simple but man, it was so good - wife was over the moon! Comfort. Looks good! I usually blacken and grill it.

Good ol Salmon. Along with halibut and moose, makes up about 80% of my protein intake, hahaha.
I've never tasted Moose ... is it comparable to anything else or is it distinctly its own flavor ? I've had Black Bear and to me, it tasted like Filet Mignon but that may have been how it was prepared. Salmon is one of my staples too.
