When I see bullfighting, I cheer for the bulls. Every time, no exceptions, "tradition" be damned. Organized, prolonged animal torture is still organized prolonged animal torture no matter how bright the colors, how loud the crowd, or how narcissistic the smiling wannabe-ladies-man with the cape and sword.

When I was a child I liked to watch bullfights on television, it was the “culture” of the time. They say it is an art. A tradition that I do not like. A few decades ago, it has been forbidden to use animals in local festivals to torture them. However, they still continue to mistreat the bull in village festivals, regrettable. Torture is an art for psychopaths. Here in Spain this tradition has its days counted fortunately.

Bulls can be dangerous, but a mad mama Cow is more dangerous.
Bulls close their eyes just long enough for you to maybe get lucky.
Mad Mama Cows do not shut their eyes and will hunt you down, walk away, and hunt you down again!!

I knew a guy in North Dakota who raised bison for meat. Much easier than cattle when it came to health and weather, he said. Buffalo are hardy and the cold doesn't bother them. The main difference was what it took to CONTAIN them. They need lots of room, and the type of fence required cost a billion dollars per inch.

Given what you guys describe it takes to hold cattle, I'm not surprised. He said buffalo don't even notice cattle fence, but walk through it like it isn't there.

The point being that no one gives a second thought to hopping in a car, of course.
One of the reasons we chose Dexter's is because they are very healthy and hearty. They generally choose staying out in the snow than standing in a barn.
A friend of ours has a herd of 60 Bison here locally. The thing with Bison is to have a good female to lead them. They are generally much more dependent on herd hierarchy than cattle. If you keep her happy, the herd is happy. A docile matriarch makes for a calm herd.
Older Bulls are smart, and CAN behave. Young bulls often need to be separated and castrated is some cases.
I have worked extensively with Bison and cattle. My preference would be to work with a well worked herd of Bison......they generally need less care....so less chances of death or serious bodily injury. :)
I once watched a guy dispatch a 2000 pound Angus bull with a pitchfork. One of them was done for, they guy won.....barely.
For multiple reasons I carry a glock 20 when working with any large animals. About 10 years ago one of ours went through a barbed wire fence, off a cliff, and broke both front legs. The house was 1/2 mile away, luckily he didn't need to suffer.
