Not charcoal... That's an electric smoker. I add wood for smoke. It took roughly 6 hours to get what you see in the pic. Started with 2 full slabs of spare ribs but had to cut in half due to space limitations, so you see the 4 halves.

It's been doing fine for me so far. Traditionalists will scoff, but I do both ways and this is certainly more convenient for the "old and weary" like myself.
Last night was my wife's birth day dinner. We had grilled tri tip, rice and beef gravy, fried shrimp, salmon dip, chicken wings, sushi of all shapes and sizes. I think there was a salad or two also? Cake and ice cream to top it all off with!

Yesterday it was grilled chicken, fresh green beans and sliced tomatoes from our garden, and french-fries.
Today it’s burgers, corn on the cob, baked beans, potato salad, and a homemade fruit salad.
