Hi all, I recently got my 1 lb of Folklore in the mail a couple of weeks ago. I am not planning on cracking it open for awhile, but I was wondering how much you all would trust the vacuum-sealed plastic it is packaged in. I know I can't trust this for too long and will need to jar it, but I'd like to not have to get a giant jar for a little while. Days? Weeks? Months?

Here’s the thing: Unless the bag is dated, you have no idea how long it has already been stored in the bag or under what conditions. Since you received it “a couple of weeks” ago, it may have already spent a month or more in plastic.

I only rarely buy in sealed, 1lb bagged quantities. But when I do, I jar the contents immediately upon arrival. Personally, when I have a bag like this ordered, I pick up the appropriate jar ahead of time.

I'd jar it up post haste. I personally don't use jars any more though. I've switched to Mylar foodsaver bags, takes up less room and I can basically portion it out into pouches of a few ounces.

Hmmm, I have a couple of pounds of this that I had not even considered transfering to jars. I guess I need to get busy and get it sealed up.
