I have a Falcon Hunter which I smoke aromatics in. (which I like very much)

I have 2 bowls, the Apple and the Dublin.

It seems like the Apple bowl stays much cooler then the Dublin.

Is this my imagination or is this true for the shapes?

The thickness of the bowl, irrespective of its shape is the main determining factor in the bowl getting hot.
Rusticated bowls can burn a little cooler due to having more surface area to dissipate the heat, therefore ideally you need to seek out a thick walled rusticated bowl.
