Dowel pipes

Any good reason I shouldn't attempt to make a pipe from hardwood dowel? You know, walnut or ash or the like. It just seems like a project waiting to happen. And what sort of adhesive should I use to hold the stem and bowl together? I'd like something natural, but please don't suggest rabbit skin glue.
