Buy can of chipotles in adobo sauce at the supermarket. Dump the contents in to small food processor and whirl until it is a chunky paste. Take 2 pounds of medium (21-25) or large (U-15 or less) shrimp and dump in a large freezer bag. Add chipotle mixture and moosh around to get all shrimp covered. Let it marinate for 30 minutes to two hours.
Pre-heat oven to 400 degrees. Take bacon strips and place on cookie sheet. Place in oven for 6-8 minutes until it is about half cooked. Remove from oven and let cool enough that you can handle it. Okay wrap a single wrapping of bacon arounf the shrimp and stick a toothpick threw to hold on. Put back in you 400 degree oven for 6-8 minuts to finish cooking,
Serve as is bot hot or cold. Depending on how long you left the shrimp in the chipotle mixture will determine how hot the shrimp will be. If you like it really hot (and I mean hot) take a habanero, remove the seeds and stems and throw into the chipotle mixture before processing.
